Banana Cake

This banana cake became Chikako's trademark (although she made many other wonderful ones). Similar to banana bread, it is a great way to use aging bananas.

Ingredients:
80g butter
80g sugar
3 eggs
150g self-raising flour
3 bananas
3 tablespoons rum
1 tablespoon cinnamon

Time: 1 hour or so
Yield: 6 - 12 slices

 

Directions:

1.Preheat oven to 170c.

Melt some butter and spread on 20 cm round baking dish or cake mould. Then dust with a small amount of flour (this quantity of butter and flour is not included in the list of ingredients).
3. In a bowl, sift the flour and cinnamon together.
4. In another bowl, mash the bananas and add the rum.
5. In a large bowl, whisk the eggs and sugar together until creamy.
6. Melt the butter. Add the melted butter to the eggs and sugar, and mix.
7. Add the bananas and rum to this mixture, and mix roughly.
8. Mix in the flour and cinnamon.
8. Pour into cake mould.
9. Bake for about 40 min.
