Chocolate Espresso Cake

While my chocolate cake variations were oft-eaten in Flat 13, towards the end of the year Chikako pulled this great recipe out of her hat. It is rich and chocolatey without being too sweet.

Ingredients:
100g dark chocolate (Belgian chocolate ideally!)
20g cocoa powder
70g self-raising flour
2 eggs
70g butter
50g sugar
1 tablespoon rum
1 tablespoon espresso

Time: 1 hour or so
Yield: 6 - 12 slices


Directions:

1.Preheat oven to 170c.

Melt some butter and spread on 20 cm round baking dish or cake mould. Then dust with a small amount of flour (this quantity of butter and flour is not included in the list of ingredients).
3. Chop the chocolate into small pieces.
4. Sift the flour and the cocoa powder together.
5. In a large bowl, whisk the eggs and sugar together until creamy.
6. Melt the butter. Add the melted butter to the eggs and sugar, and mix roughly.
7. Add the chocolate pieces, the espresso, and the rum, and mix.
8. Bake for about 40 min.
