Deviled Eggs

This is my own version of deviled eggs. It's a bit spicier and healthier than most.

Ingredients:
12 hard-boiled eggs
1/4 cup plain yogurt
2 teaspoons spicy mustard (English mustard is best)
1/8 teaspoon parsley or dill
pinch of
black pepper
pinch of salt

pinch of
chili powder or paprika

Time: 10 minutes (+ time for chilling)
Yield: 2 dozen

 

Directions:

1. Peel hard-boiled eggs.
2. Cut eggs in half, lengthwise.
3. Scoop out yolks into small mixing bowl.
4. Add yogurt, mustard, parsley and/or dill, and black pepper and salt to taste.
5. Mix until creamy.
6. Spoon yolk mixture back into the egg whites.
7. Sprinkle chili powder or paprika over yolks.
8. Refrigerate -- best chilled -- and serve.


Hard-Boiled Eggs

1. In a saucepan, place eggs and fill with water until covered.
2. Heat water to boiling.
3. For hard-boiled eggs boil for 10 minutes, for soft-boiled eggs 3 minutes.
4. Remove from heat and run under cold water.

Note: To check for doneness, spin egg on flat surface. A hard-boiled egg will spin readily, a soft-boiled egg will wobble.
